What they say about it

XYLATHIN® xylanase is highly active enzyme that rapidly degrades xylan to reduce viscosity in cereal-based mashes such as wheat, rye and barley. The product contains endo-β-1,4-xylanase, an enzyme that hydrolyzes the xylan component in cereal grains. The thermal tolerance and broad pH range of XYLATHIN® xylanase enables use over a wide range of process conditions for the reduction of mash viscosity prior to and during liquefaction. Developed and marketed by Verenium Corporation, this unique enzyme is designed to significantly improve the efficiency and economics of fuel ethanol production. Source

How they say it works

XYLATHIN® xylanase product performs across a wider temperature and pH range than competitive products, allowing easier operation without a loss in productivity through the normal process variability of day-to-day operations. XYLATHIN® xylanase is able to achieve a more rapid viscosity reduction in a shorter time than competitive products. In addition, XYLATHIN® xylanase reduces water retention in distiller's dried grains with solubles (DDGS) better than competitor products and at a significantly lower dose. The ability of this product to reduce water retention has been shown to significantly reduce energy consumption during drying of DDGS in commercial fuel ethanol production. Source
